Dairy shouldn't be a problem unless there is tummy-upset involved. It really /doesn't/ increase mucous, any more than /any/ simple sugar (read: pretty much anything that isn't just water or other clear liquids) will do.

Maybe it doesn't increase mucous, per se, but I know from experience you don't, say, drink a glass of milk before a concert, because it does coat your throat in a gunky sort of way.

Right, but you wouldn't drink anything sugary, either, for the same reason. You'd stick to tea or water, pretty much.
