Because humans are human and selfish and they like to dictate and feel superior to other humans. And religion is an easy thing to war over, there is no way to prove anything about many of the dictates of the various religions (the afterlife comes to mind). So if I think that I am right and you are wrong, I must MAKE you believe that I have the superior religion. Thus we end up at war because your beliefs make up a part of you and if you just passively roll over and change because someone else tells you too....you are a pretty shallow person. And most people aren't shallow about their beliefs. Your beliefs are what you turn to in hard times and good times, they are with you constantly, people HAVE to believe in something.
